Do you love one bowl recipes? Well you will love these Corn Fritters! They come together all in the one bowl and it truly is a simple recipe and quick recipe. These Corn Fritters are great recipe to make with your kids. They can help with so much of this recipe, younger children can help with measuring ingredients, cracking eggs and stirring the mixture. Older children could help with chopping the spring onions and chives (or using scissors to cut them), grating the cheese and even cooking them on the pan.
These fritters are made with a mix of fresh corn and creamed corn. You could make your own creamed corn if you like, though its fine to just grab some from the store. We don’t recommend using frozen corn in this recipe, though you could. Frozen corn just does not taste as sweet. So if you didn’t have fresh corn we would recommend trying the canned corn kernels which are closer in taste to fresh corn.
These simple and delicious Corn Fritters come together so quickly and taste great. Slightly sweet and so more-ish. Easy to make with the kids.
- 2 eggs
- 1/3 cup self raising flour
- 1/2 cup grated cheddar cheese
- 1/3 cup creamed corn
- 1/3 cup cooked sweet corn kernels (see note)
- 2 spring onions chopped finely
- 1 tbsp finely chopped chives
- salt and pepper
- 1 tbsp olive oil
- In a large bowl whisk together the flour and eggs until smooth
- Add in the remaining ingredients and mix well to combine
- Heat a frypan over medium to low heat
- In batches, cook spoonfuls of the batter for two to three minutes a side or until golden brown
- Cool slightly then serve
You can quickly cook corn on the cob for this recipe by boiling a prepared cob for two-three minutes. Then cool under running water and slice off the kernels.
